OCS 2007 R2 is now supported on Windows 2008 R2

All the details for support are in KB 982021: http://support.microsoft.com/kb/982021/.

Additionally, KB 982020 outlines issues when upgrading the domain to Server 2008 R2 and the way to fix these issues by re-running forestprep.
